Great leftover roast recipe! Quick easy and full of flavor!
Ingredients: Feeds 5-7
3lb chuck roast
1 large can of your favorite enchilada sauce
1 can green chili's
1/2 chopped yellow onion
1/4 cup olive oil or vegetalbe oil
1 cup shredded Chedder Cheese
Large burrito size tortillias
To season roast: Mix together all ingredients and rub on both sides of roast.
1 tbs black pepper
1 tbs cumin
1 tbs salt
1/2 tbs Cayenne pepper
2 garlic cloves (minced)
Directions:
Heat oven to 225 degrees. Mix ingredients and rub on both sides of the roast. In a large pan heat olive oil on med-high heat. Once heated sear roast on all sides and place inside a roasting pan.
Pour enchilada sauce over the roast along with the chopped onion and green chilis; mix
Cover and bake for 2 1/2 to 3 hours until roast falls apart with fork.
Once cooked shread the roast and pour over desired amount of enchilada sauce that it cooked in. Be sure to save some for the top of your burrito! You dont want it dry, so add that flavor to your shredded meat!
Fill tortilla with desired amount of meat, and roll up like a burrito-you dont want any of the meat coming out of the sides!
Turn oven on Broil.
Laddel out some of the enchilada sace and pour over burrito.
Top with desired amount of cheese and place in oven and broil until cheese is melted. (watch carefully you dont want to burn the cheese)
Serve with a side of sour cream or guacamole!-Careful plate will be hot
