I absolutly love banana bread, and with some trial and error in the kitchen, I came up with the perfect recipe for banana bread. The taste of cinnamon and sugar swirled inside warm banana bread is absolutly perfect.
When it comes to bananas, there are two types of people: those who buy them and eat them, and those who buy them, let them brown on their counter, and either throw them out or bake something with them. I on the other hand honestly dont care for banana's except when it comes to banana bread. I'll buy banana's and once a day put a banana in my hunnys lunch box til they are about time to bake with, thats when the magic begins!
Ingredients
1/3 cup sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
2 eggs (beaten)
1 cup milk
1/3 cup extra virgin coconut oil
4 ripe bananas
1/2 cup Chopped Walnuts (optional)
Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan with coconut oil or an oil you have on hand. In large bowl combine flour, baking powder, baking soda, salt and 1 cup sugar. Mash the ripe banana's. Add eggs, milk, banana's and oil to flour mixture, add walnuts if disired. Stir until just moistened. Pour half of the batter into pan. Mix the 1/3 cup sugar and 2 tsp cinnamon and sprinkle away. Cover with remaining batter. Bake in preheated oven for about 1 hour and 10 min, or until a toothpick inserted into center of the loaf comes out clean. When done sprinkle with remaining cinnamon/sugar. Let cool in pan for 10 minutes before removing to a wire rack to cool completely.
