I know, I know...every woman claims that their chocolate chip cookies are the best and you will go through thousands of recipes to find your favorite cookie. But, you will never know til you try mine.
These cookies are made with a few secret ingredients, but the main one is Coconut oil. You will find out I use coconut oil quite a bit while baking. Not only is it healthier for you unlike Vegetable oil it also makes the cookies sweet. You can use vegetable oil, but the flavor comes out different. Also for the coconut haters out there, I myself can not stand the flavor of coconut! Dont worry, you wont taste no trace of coconut in these bad boys!
2 sticks unsalted butter (room tempiture)
1/2 cup extra virgin coconut oil
2 TBS vegetable shortening
1 3/4 cup light brown sugar (packed)
3/4 cup white sugar
3 large eggs
2 TSP baking soda
1 TSP salt
2 TSP vanilla
3 3/4 cup all purpose flour
1/2 cup cornstarch
1 12oz packate of semi-sweet chocolate morsels
1 cup milk chocolate chips
1/3 cup dark chocolate chunks
In an electric mixer beat the butter, coconut oil and shortening til smooth. Add all sugars until fluffy. Add eggs and vanilla well. In a small bowl combine flour, cornstarch, salt and baking soda and gradually add to mixture. Stir in all chocolate morsels. In 1/4 capfulls spoon on a cookie sheet or stoneware (my personal favorite) Bake 2-3 inches apart and bake at 375 for 12 min.
*Enjoy with a tall glass of ice cold milk, mmmm mmmm mmmm*
