This soup is loaded with spicey Italian sausage and vegetables cooked in a rich tomato broth. Carrabba's (www.carrabbas.com) is my absolute favorite Italian restaurant and if you’re a fan of Carrabba’s you will love there Sausage and Lentil Soup, Serve this with a loaf of fresh bread and you’ll have a meal that will please just about anyone.

Ingredients: Serves: 6-8
1 lb spicey italian sausage
6 bacon slices (chopped)-optional
1 large onion (chopped)
1 celerly stalk (chopped)
2 large carrots (chopped)
1 small zuccini (chopped)
6 cups chicken broth
2 (14 1/2 oz) can of diced tomatoes-undrained
2-3 garlic cloves
1 tsp salt
2 cups dry lentils
1 tsp black pepper
1 tsp red pepper flakes
1 tsp basil
1 tsp oregano
1 tsp parsley
1/2 tsp thyme
Directions:
Brown sausage, drain off fat. If you would like to add bacon, add at the same time as the sausage and brown.
In a large pot combine all ingredients and bring to a boil
Reduce heat and cover
Simmer for about 1 hour or until lentils are tender. Add water if necessary, for desired consistency.
Sprinkle with parmesan cheese and serve.
