Ingredients: Yeild: 1 chimi per person
Burrito Size flour tortillia's (1 per person)
Left over Roast beef (shredded) You can use shredded chicken as well
1 4oz can of green chili's
1/2 tsp pepper
1/2 tsp cumin
1/4 cayenne pepper
salt to taste
3 tbs Chicken or beef broth
With leftover roast beef or chicken, simply shred the remaining meat and toss in a frying pan over medium heat. use a little bit of chicken or beef broth to make it less dry but not runny!
Add all seasonings and chilis, mix well
Add meat mixture in tortilla and roll, folding the ends in so no meat falls out.
Use toothpicks to secure the tortilla shut.
When deep fryer is to 375 degrees, toss in basket and fry until golden brown about 5 min per chimichanga.
Top with all your goodies! Guacamole, sour cream and hot sauce!
