2 large chicken breasts (mine were about 1 lb each)
14 raw bacon slices
4oz whipped cream cheese
1 jalepeno (diced small)
1/3 cup Sharp Cheddar Cheese (shredded)
1 garlic clove (minced)
1/4 tsp pepper
Heat oven to 400 degrees
Place cream chease in a mixing bowl, toss in diced Jalepeno, minced garlic, shredded cheese and pepper. Mix well.
Take your chicken breasts and make a slit with a knife in the middle of the breast. Make sure to not cut all the way through the bottom or the sides of the chicken.
Stuff chicken with the cheese mixture.
Next place 4 slices of bacon verticle on a cutting board, and place 3 slices of bacon horizontal on top of the 4 slices of bacon, as if to make a cross. Place chicken breast directly in the middle and wrap the horizontal ends in first followed by the vertical ends of the baon and secure with tootpicks. (see picture below) repeat for the 2nd chicken breast.
Once wrapped and secured with toothpicks sprinkle desired amount of pepper over the bacon wrapped chicken and place in a 400 degree oven and cook for 45 min to 1 hour depending on the size of your chicken breast.
Remove toothpicks and enjoy.
