This is a quick and tasty side dish, which goes wonderfully with grilled meats, and salmon. Orzo is a great choice, when you are looking for a quick side. It cooks faster than rice and is a great alternative to risotto.
Ingredients: Serves: 6
2 cups Orzo pasta
1 package of cremini mushrooms
4 oz cream cheese (room tempiture)
1/2 med onion (chopped)
2 garlic gloves (minced)
1 tsp salt
1/2 tsp pepper
1/2 tsp parsley
4 cups chicken broth (2 cans low sodium)
2 tbsp unsalted butter
1 tbsp fresh rosemary (chopped)
shaved parmesan cheese (optional)
Directions:
In a large sauce pan (with lid) over medium heat add butter. Once melted add onions and cook til tender.
Add garlic, parsley, and rosemary and cook for 1 min, then add the mushrooms and saute until soft.
Next add the chicken broth and orzo and cook stirring occasionally until all broth is soaked up and Orzo is fully cooked. (about 9 min)-cover with lid
Fold in the cream cheese until melted.
Top with shaved parmesan cheese and enjoy!
